The nose on this fan favorite seasonally released unpasteurized sake is a lively collection of young pear, peach, Sprite, Mandarin, and snow melt aromas. This is a Yay! Sake through and through. Why? Because when you taste it your mouth screams yay for all of the frisky, zesty, tingly, and brash flavors and feelings. It’s light, edgy, and crisp, but with a living elegance that speaks to the Ginjo quality of this brew. There is a slight effervescent quality that jumps in a wine glass, and this sake epitomizes bright seasonal sake. Look for cherry, crisp grapes, tangerine, grape popsicle, fleshy papaya, and blueberry flavors that get softer as the fluid warms in the glass. Great by itself, but also lots of fun with spring fresh cuisines. WORD: Yay! WINE: Beaujolais/Crisp Whites BEER: Fruity Ales FOODS: Sushi, sashimi, fresh veggie tempura, crab, shrimp fritters, and fruit/cheese plates.  (2024)

The nose on this seasonally released unpasteurized “Nama” sake is a light collection of cherry, pear, apple, vanilla, and mineral aromas. Named after a gentle spring breeze this brew drinks very much like its name – gentle and light. Made with Gohyakumangoku brewing rice, the fluid is light, smooth, fresh, clean and very gentle. Look for Asian pear, peach, raspberry, persimmon, and rose water flavors that wisp through the palate with a dry and crisp finish. This is gentle and refreshing sake at its finest, and would appeal to those who don’t like boozy sake. Perfect for warm days and gentle nights. WORD: Light WINE: Gentle Reds/Clean Whites BEER: Light Beer FOODS: Spring vegetable tempura, Spanish mackerel, steamed white fish, grilled chicken, oysters, sushi, sashimi. (2023)
