Denshin Fuyu "Winter"

Four Hot Words: Dry, Clean, Vibrant & Fresh

The nose on this seasonally released sake (look for the snowman on the bottle) is a fat collection of meaty, veggie, onion, soup, and yeasty aromas. Talk about a fat, fun, and velvety sake. This “snowman” is viscous, plump, and smooth with lots of rich and round dried fruit flavors. Big and beefy it says hello to your palate with a solid and rich smoothness. Not dry and not fruity it just sits ricey, rich, gooey, and very fleshy. It is is smooth with hints of raisins, dried fruit, cooked pear, and sweet rice licks. Seasonally smooth this unpasteurized sake has a very plump alcohol level (18%), but you taste more of the fat action than the booze. So velvety and so Frosty! WORD: Smooth WINE: Soft Reds/Thick whites BEER: Belgian Ales FOODS: Salty and savory pub fare with burgers and fried food with spice. (Winter 2017)

The nose on this year’s Fuyu is a gathering of melon, pear, blueberry, and fruit cup aromas. Wow! Talk about a change up! This unpasteurized or “nama” sake is raw raw raw. Talk about a bully in a bottle. If you are a cocktail drinker this brew is for you. Very big in the glass look for hints of crisp fruit tones like apple, pear, and unripe mango. But that’s not it! There is also a hot ricey-ness that almost has a veggie quality to it that makes this brew taste masculine and almost savory. There is a subtle richness, but the boozy heat steals the show and is really calling folks who like their liquors large and their foods bold. WORD: Big WINE: Huge reds/vast whites BEER: Stouts FOODS: Everything that you can eat, but bigger flavors will do the best. (Winter 2016)

The nose on this massive and masculine nama is made up of steamed rice, blueberry, melon, and fruit cup aromas. Talk about a big punch in the mouth! Say hello to a seasonally released sake that is raw and explodes in your mouth. Cocktail drinkers take note! Don’t let the smooth, round, and soft feelings fool you. This tiger roars with a savory flavor that has hints of cooked rice and veggie elements that does not drink like your average fruity nama genshu. This dude does best in a larger glass to push all of that acidity and alc (18%) around to make a rich and bold drinking experience. This is a nama just like your dad used to drink (or your mom if she was ballsy!) and does far better with foods of all types as it is strong and confident and compliments without getting overwhelmed. This nama will warm your cold winter body! WORD: Big WINE: Huge reds/Boozy whitesBEER: Stouts FOODS: Meats, savory stews, salty oily bar fare. (Winter 2015)
