The nose on this seasonally released summer unpasteurized sake is a big collection of ripe strawberry, guava, white raisin, maraschino cherry, simple syrup, star fruit, and a hint of pepper aromas. Always a fan favorite and one of the longest standing summer namas, this "Natsu" drinks rich, round, smooth, plump, with a very cool water-like feeling within the fluid. Look for pear, apple sauce, marshmallow, strawberry, sugar cane, watermelon water, grape jelly, and Mandarin orange flavors that roll gently on the palate with an uptick minty finish. This is a fun summer brew that is both velvety and watery, which spells for a slick and tasty drinking experience. WORD: Jammy WINE: Plump Reds/Viscous Whites BEER: Belgian Ales FOODS: International spice, street fare, beach tacos, food truck fare, fried, salty, and savory dishes. (2024)

The nose on this terrific seasonally released summer unpasteurized sake is a fruity collection of grape, melon, apple, strawberry, cherry, and green bamboo aromas. This is by far one of the most anticipated summer released sakes in Japan, and is a total fan favorite at True Sake. First of all, it is a well-priced Junmai Daiginjo Nama – say what? Then add to the fact that it drinks so great, and you have the perfect summer sake. Layered, slightly viscous, juicy, and very smooth, this brew does very well in a white wine glass. There are so many layers and feelings to this brew. Take note of the fruit tones, umami, and secret rice tones that drink elegant and confident. Look for apple, breakfast cereal bar, strawberry, mango, white peach, grape, and fruit jam flavors that have a rich and dry finish. Well done Ippongi Kubo Honten! WORD: Juicy WINE: Fat Reds/Jammy Whites BEER: Honey Belgians FOODS: Shellfish, lobster, crab, American sushi, International street fare, some spice, fish tacos. (2023)
