Fukucho Junmai Ginjo "Moon on the Water"
The nose on this elegant sake made by a female master sake brewer is a collection of pear, honeydew, yellow apple and sweet rice aromas. Talk about a ripe and layered sake. This Junmai Ginjo drinks like a Daiginjo in that it is clean and nuanced with a very gentle roundness. There are hints of apple, pear, and mango fruit tones but this brew is not sweet. It is a very drinkable sake that is a celebration of smoothness and the fluid feels great in the palate. Soft but with impact is a great combination in the sake world.
