Gunma Izumi Yamahai Junmai "Famous Fountain"
Some Yamahais are too "Yamahai(y)" and drink like a wet dog! And some Yamahais are almost too fancy and drink like a Ginjo or even a Daiginjo. This brew from Gunma Prefecture (Not a lot of Gunma sakes available in the US) is full, rich and fat. BUT it drinks very smooth, soft, and round, which means you can have more than a glass or two, because it doesn't drink like the wet dog! It is a great sake to warm and definitely to pair with all type of foods. I like the fact that there is a subtle acidity play that is unlike other yamahais that at times can almost be too acidic. A smaller cup brings forth more Yamahai qualities, but a mid-sized glass makes this old method sake taste very modern.
