Hakutsuru Junmai Ginjo "Superior"
This Ginjo has a nose of soft ripe strawberries and grass. It has a very mild and dry start that develops into a more fruity finish. It is a perfect beginner’s example of a “Light and Smooth” type sake with a suppressed sweetness, and old faithfuls appreciate the rolling acidity play that rounds off this light Ginjo. As the White Crane (Hakutsuru) warms in your mouth one can find hints of ripe fruit and a balanced dryness that makes for a Ginjo that goes well with food pairings.
