Ichinokura Hyakkoi Junmai Nama
The nose on this year-round unpasteurized sake is a fun collection of green apple, ricey, honeycomb, and nutty aromas. My notes read: A very cool Nama! It’s not fruity, not spastic, not jagged, rather it’s a very well-balanced and controlled unpasteurized brew that is ricey and savory and totally tasty! That made me laugh when I typed it up. Why? Because this sake is excellent and I forgot that. Clean, round and full-bodied which is soft in the mouth and has a light layer of sweetness. This brew has good body! It is balance personified for a Nama sake. Rice freshness! Hints of green apple, yeast, toasted wheat, and steamed rice. It is also very savory! Huh? Yup, it is rich and filled with umami goodness, which makes it un-fruity!
