The nose on the specially released “seasonal draft sake” is a gentle collection of roasted nuts, wood, steamed rice, and straw aromas. This is not your mom’s Kikusui, so don’t let the familiar bottle trick you into thinking you will be sipping a light and slightly fruity Junmai Ginjo. This is better! Round and savory it hits you with the first sip as velvety, rich, and smooth characters come forth. The fluid is very chewy and is loaded with savory flavors such as amber honey, rich rice candy, honey nut breakfast cereal, and a hint of chocolate brownie as the fluid warms. This Hiyaoroshi is drinking very well this season and it is a food-pairing fiend. The nose on this seasonally released Fall Draft sake is a gentle collection of crushed leaves, soy sauce, citrus, and toasted rice aromas. Okay! Hands down this is the softest and smoothest Hiyaoroshi sake this season. It is so round and fluffy you can actually taste the smoothness. That’s right! You can taste the feeling! On the whole the brew drinks dry with a velvety flow. There is a nice richness with all of the ricey and neutral flavors. I wrote “rich water” in my notes and feel that this is the definition of a rice libation. It’s not fruity or sweet, just ricey and nice! WORD: Smooth WINE: Merlot/soft whites BEER: Creamy ales FOODS: Salty and savory fare with grease and oil. (2017)

(2016) The nose on this single-pasteurized seasonal sake is made up of smoky, burnt rice, caramel, and earthy elements. Well this special sake is a great example of a different “expression” of a sake that you love. So many folks love the Kikusui JG for good reason, but behold a sake that is similar in elegance but different in complexion. This is an elegant Hiyaoroshi that drinks smooth and semi-rich with a flow that is velvety, silky and nice! Not as bright as the JG, this slightly aged sake has a little more rich sweetness that is mellow and well balanced. A smooth mouthful that is thick but clean, and holds hints of rice, caramel, nougat, and sweet bun flavors. WORD: Velvety WINE:Clean Reds/Fat Whites BEER: Clean ales FOODS: Rich flavors of the season.
