Koshi No Kanbai Tokusen Ginjo "Vanishing Point"
This quintessential Ginjo from the "Best Known Brewery In Japan" has a dynamic nose filled with pear, rose petal, cucumber and steamed rice tones. Talk about an ultra clean experience, the term flavored water comes to mind. There are hints of cooked pear and grapefruit elements surrounded by silky waves of steamed rice wrapped in semi-thick fluid that has the famous "phantom finish" where you do not remember swallowing. If "philosophy" were a drink, this would be it. WORD: Clean WINE: Complex reds/Layered whites BEER: Deep ales FOODS: Sushi, sashimi, most things off of the grill.
