Beau Zone Layer – Kan Chiku “Cold Bamboo”

Beau Zone Layer – Kan Chiku “Cold Bamboo”
From Nagano Prefecture. Junmai Daiginjo. SMV: +3 Acidity: 1.6

Don’t let the blank box fool you! (I personally feel the blank white box is one of the coolest boxes in the business.) This brew is anything but blank! And it makes for a good “gifting” sake if you want to go that route! I have been selling this sake from day one at True Sake, but I took a break from it for a while. Why? Because I felt the quality had slipped! It didn’t drink like itself for a while. That happens in this business. Sometimes a sake skips! For whatever reason from changing of the rice or other ingredients to having a new head brewer some sakes just take a step backwards. In most cases they return! And that is why I selected Kan Chiku for your Beau-Zone-Layer! It’s back! And this is an example of a sake that is making its way back into the line-up. It’s a very delicious and dependable Daiginjo that is full and fun! There is an elevated acidity that makes the fruit tones tone down. And there is a smoothness that makes this sake so comfortable in your glass and especially your palate.
