The "Beau Zone Layer" - Kaori Tsuru Junmai Daiginjo
Yamaguchi Prefecture. Junmai Daiginjo
SMV: +2 / Acidity:1.4
One of the best things about sake is the story behind each brew! And this wonderful Junmai Daiginjo is no exception. The real story is right there on the label staring right back at you. The Crane, silly! This glorious bird is super respected in Japan, and many sake breweries are named after a crane or Tsuru. But these special birds don’t just land and nest anywhere in Japan. Legend and lore has it that cranes are only attracted to pristine lands, with great water and lovely settings just like in Chugoku Yamaguchi, where this brewery stands. The Yamagata Brewery (yes confusing as it is a family name as well as a prefecture name) has dedicated this product to the well being of these yearly returning birds that nest very close to their brewery. They donate a great deal of time, money, and passion to the cranes, and would like to encourage you to do the same. A portion of the proceeds of this sake go to helping the cranes, so as a friend of mine (Sakeman White) says, “Please help the cranes and buy this sake!”
