Jackie Yen and Perfect Pairing Trading made their big debut at Sake Day 2025 with President and Master Brewer Chen Wei-jen of Taiun Sake Brewing from Shimane Prefecture. Chen Wei-jen got his start in the Japanese sake industry in 2012. After gaining experience at six different sake breweries including the legendary Dassai Inc., he obtained a manufacturing license for export-only sake in 2021 and established Taiun Sake Brewing LLC. Although it is Japanese sake, it cannot be sold within Japan. All the sake produced is exported overseas, with Taiwan and Hong Kong being the primary markets for sales, with the United States being a new proving ground. 

Jackie will be showcasing some very cool offerings from Taiun Sake Brewing, including sakes that use the heritage rice strain Taichung 65. Ask Jackie questions about how Taichung 65 ties together Taiwan and Japan through rice cultivation and sake brewing.

Kato Kichibee Shoten may not be a household name in the United States, but the brand name "Born" sure is. When you think of some of the first Junmai Daiginjo sakes to be imported to America, "Born" is sure to be on the top of that list. Kato Kichibee Shoten only makes Junmai Daiginjo sakes using either AAA Yamadanishiki from Hyogo or Gohyakumangoku from Fukui. So rest assured, only the most premium sake is brewed at Kato Kichibee Shoten. 

Alex Bemis will walk you through the splendid and supreme sake offerings from Fukui Prefecture. If you are a Junmai Daiginjo fan, you do not want to miss this tasting.
